Honey Mustard Dipping Sauce

This is the sauce I love to serve with soft pretzels. There are no measurements, it is all to taste. Usually, I use mostly mayo, a small squirt of mustard and about twice as much honey as mustard. It's up to you, and what your taste buds prefer!

Honey Mustard Dipping Sauce
Mix together a few spoonfuls of mayo. Add a squirt of mustard and a some honey. Mix together. Taste and adjust ingredients as needed.

Ranch Seasoning Mix

This recipe comes from Gayle at the Grocery Cart Challenge. It is great for dip, dressing, or adding flavour to many dishes!

Ranch Seasoning Mix - from Gayle
6 Tablespoons dried onion flakes
5 teaspoons paprika
2 Tablespoons parsley flakes
4 teaspoons salt
4 teaspoons sugar
4 teaspoons pepper
3 teaspoons garlic powder

Mix together and store in an airtight container in a cool dry place for up to 12 months.

For Dip:
Combine 1 Tablespoon dry mix with 1 cup sour cream or yogurt

For Dressing:
Combine 1 cup mayonnaise with 1 cup buttermilk and add 1 Tablespoon of dry mix. Shake or whisk to combine and refrigerate.

Bacon and Cream Cheese Dip

Bacon and Cream Cheese Dip - from Mumma
1 8 0z brick cream cheese
1/2 cup mayo
3 green onions, chopped
6 slices bacon, cooked and crumbled
1 cup grated cheese

1. Mix all ingredients and place in small casserole dish.

2. Bake at 350 for 30-40 minutes, or until bubbly.

Serve with crackers.

Greek Style Nachos

Greek Style Nachos with Baked Pitas - inspired by Sandra Lee
4 pitas
2 T EVOO
4-6 tsp Greek seasoning
1 clove garlic, minced
1 T minced onion
1 lb groung lamb, beef or venison (although 1/2 lb would be MORE than enough)
1 cup hummus
1 cup tzatiki
1 large tomato, finely chopped
1/4 cucumber, finely chopped
1/2 red oinion, finely chopped
1/2 can sliced black olives
1 cup lettuce, shredded
1/2 cup feta cheese, crumbled

1. Brown meat with garlic, minced onion and 2 tsp Greek seasoning. Drain. Meanwhile, prepare pitas and toppings. For pitas, use a pizza cutter to section each one into 8 wedges. Arrange on a foil lined baking sheet. Brush with olive oil and sprinkle with 2 tsp Greek seasoning. Bake at 400 for 10-12 minutes, until brown and crispy. Chop all toppings.

2. Spread hummus along the bottom of a deep dish pie plate. Sprinkle with remaining Greek seasoning. This isn't really all that necessary but I only had a little bit left so I used it up.

3. Top with ground meat. Like I said, I used an entire pound but 1/2 would have been more than enough. I now wish I had kept the other half to put on pizza tonight.

4. Top with tzatiki. Don't worry - I will never figure out how to spell this word.

5. Top with remaining toppings, ending with feta cheese.

Serve with baked pita chips and/or regular tortilla chips. This makes a delicious appetizer or an interesting meal. We had it for our meal with cucumber dill salad. The only problem is, we ate less than half of it and it doesn't do to well as leftovers.

Pumpkin Cream Cheese Dip

I found this recipe for a while and had been saving it for just the right occasion. Just the right occasion came this weekend when we had a party with a group of our friends from high school.


Pumpkin Cream Cheese Dip - adapted from Better Homes and Gardens
1/2 package of light cream cheese, softened
1/4 cup canned pumpkin
1/8 cup sugar
1/2 tsp cinnamon 1/4 tsp nutmeg 1/8 tsp ginger 1/8 tsp allspice
1/4 t
easpoon vanilla

Mix all ingredients with an electric mixer until smooth. Chill for at least 3 hours or up to 24 hours.

Serve with graham crackers and apples for spreading. Be sure to inform your guests that it is not, in fact, roasted red pepper hummus, before they slop it on their plate and let it mix together with their salsa.

Hummus

One of my favourite garden season lunches is fresh, raw veggies with homemade hummus. This recipe adds a little something extra to traditional hummus.

Hummus - Lucy
4 cups cooked garbanzo beans (or two cans).
3/4 cups liquid from beans (or water if using dried beans)
1/4 cup tahini
Juice from one lemon
3-4 tsp garlic
2 tsp cumin
1 tsp soy sauce

** Feel free to cut this in half. It makes quite a bit and I usually freeze half and eat half.

1. Drain garbanzo beans, if using canned. Reserve 3/4 liquid.

2. Place all ingredients into a large bowl (or blender or food processor).

3. Blend until smooth (I used an immersion blender but a food processor would be best - sometimes I just don't want to wash all the parts).

Taste and make sure everything suits your tastes and add more spices/garlic/liquid if necessary. Enjoy with pitas and fresh veggies.

Makes 3-4 cups.
