Mumma's Creamy Potato Salad

Nothing says summer like a delicious potato salad!

Mumma's Creamy Potato Salad
10-12 medium potatoes
3-4 eggs
2 carrots, finely chopped
3-4 green onions, finely chopped
1 radish, finely chopped (optional - radishes will NOT find their way into my salad)
3/4 cup light mayo
1/3 cup white sugar
1/3 cup vinegar

1. Peel, chop and boil potatoes. As well, boil eggs. Let cool.

2. Chop potatoes smaller and place in salad bowl. Do the same with the eggs.

3. Add chopped carrots, onions and radish.

4. In a glass measuring cup, mix mayo, sugar, vinegar, salt and pepper. Pour over salad and mix. Cover and refrigerate overnight for best results.

Make 10-12 servings.
