Bumbleberry Pie

Bumbleberry Pie - makes one double crust pie
1/3 recipe homemade pastry
4 cups mixed berries, fresh or frozen (I used 2 C raspberries, 1 C strawberries, 1 C blueberries)
1 cup sugar
4 T flour

1. Stir together berries, sugar and flour in a large, microwavable bowl. Microwave on high for 30 seconds at a time, stirring in between each for 1 1/2-2 minutes, until sugar begins to dissolve.

2. Spread berries in an unbaked pie crust.

3. Top with remaining crust. Seal edges and cut away excess dough. Cut slits in the top to vent.

4. Bake at 375 for 30-45 minutes, until crust is browned and berries are bubbling. It's wise to place a baking dish under the pie plate so you don't end up with a big mess as the berries like to bubble over.
