Gluten Free Cheesy Biscuits

Earlier this summer, my sister in law was vacationing in Florida and discovered these delicious gluten free biscuits at a restaurant she went to there. She searched the Internet to find a recipe for them when she got back and finally found a few. We compared a number of different recipes and ended up using this one.

Gluten Free Cheese Biscuits - from all recipes.
1/2 cup olive oil
1/3 cup water
1/3 cup milk
1 tsp salt
2 cups tapioca flour
2 tsp minced garlic
3/4 Parmesan cheese (I only had the powdered stuff - gasp - which was detrimental to the final product)
2 beaten eggs

1. Add olive oil, water, milk and salt into a large saucepan over high heat. Bring to a boil.

2. Remove from heat as soon as mixture comes to a boil and stir in tapioca flour and garlic. Let sit for 10-15 minutes.

3. Add cheese and eggs. Stir until well combined. Dough should resemble cottage cheese.

4. Drop by the spoonful onto an ungreased baking sheet. Bake at 375 for 15-20 minutes.

The biscuits would be much better with freshly grated parm. Also, try adding cheddar cheese, bacon and chives, ham and broccoli or any other mixture of your choice!

Makes 12 biscuits.

    Using tapioca flour is something new to me. Do you get it in store where all the other flours are it? These biscuits look GREAT!!!!

  2. These biscuits are definitely a favorite at our house. I like using cheddar cheese.
