Banana Chocolate Chip Nut Bread

Here is my very favoritist banana bread recipe

Banana (Chocolate Chip) (Nut) Bread
2 cups flour (I use one all purpose and one whole wheat)
1/2 tsp baking soda
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup butter, at room temperature
1 cup sugar
2 eggs, beaten
3-4 ripe bananas, mashed
1 1/2 tbsp buttermilk*
1 tsp lemon zest (or lemon juice)
1/2 cup chopped pecans
1/2 cup chocolate chips (do any combination of nuts and/or chocolate chips, or none at all)

*Don't have buttermilk? Just add a little bit of white vinegar to your milk and let it sit at room temperature for 5-10 minutes.

1. Sift together flour, baking soda, baking powder and salt.

2. Cream butter and sugar until smooth. Add eggs, bananas, buttermilk and lemon zest or juice, beating well after each addition.

3. Add pecans and/or chocolate chips, if desired. Add dry ingredients and mix until just moistened. Resist the urge to over mix! Transfer batter to greased loaf pan (either one large or 4 minis). Bake at 350 for 1 hour (for large loaf) or until toothpick stuck into the middle comes out clean. If you are baking 4 mini loaves it will take less time, so watch closely.

Makes 1 large loaf or 4 mini loaves.
