Honey Oat Bread

Before I start, let me apologize - I don't know where this recipe came from. It is one that I had scribbled on a loose piece of paper and failed to write down the source. So, if I'm stealing your recipe, I'm sorry. Although I did make enough changes to the original recipe that I *think* I can now call it my own.

Honey Oat Bread
1 cup warm water
1/4 cup honey
2 tbsp canola oil
3 cups whole wheat flour
1/2 cup oatmeal
3/4 teaspoon salt
2 teaspoons breadmaker yeast.

1. Add all ingredients into bread pan in the order listed.

2. Select dough cycle. *You can also select the whole wheat cycle and have it bake in the machine - it is pretty good this way also.

3. When dough cycle is complete, turn dough out onto lightly floured surface. Gently knead for about one minute. Shape and place in greased bread pan. Cover and let rise for 30-45 minutes or until bread is just barely cresting the top of the pan.

4. Bake at 350-375 (get to know your oven) for 30-40 minutes. Cover with foil if it begins to brown too much.

I have made this bread a number of times on the whole wheat cycle in the machine. Yesterday was the first time I did the dough cycle and baked it in the oven. It ended up being the perfect consistency and shaped very nicely. I only found one problem ... when I was slicing it I tasted a little piece of the crust and I found that the honey taste was a bit overbearing. It may have just been that slice (I will ask FD tonight because he took some in his lunch) but from what I tasted it seemed too sweet. You may want to try reducing the honey and adding a bit more water. I didn't have this problem when I baked it in the bread machine, so keep that in mind.
