I wish I was more computer savvy, because I'd love to make a "Soups On" button. Unfortunately, though, I am not. And so I will just have to wait until I can bribe my brother to do it for me.
Pea soup was on the menu for this week because Ham was on sale for super cheap. Coincidentally, Annie said she loves pea soup and would love to find a recipe. This recipe is modified from the Company's Coming Slow Cooker recipe book. It is among the more flavourful pea soups that I have tasted in my day. It was quite yummy!
Pea Soup
2 cups dried split peas, soaked and rinsed
1 cup diced ham
2 carrots, thinly sliced
1-2 stalks diced celery
1/2 onion, chopped
1/2 tsp salt
1/4 tsp pepper
1 T parsley flakes
1 T chicken bouillon powder
1/4 tsp ground thyme
5 cups water
1. Soak peas overnight. In the morning, drain and rinse.
2. Place all ingredients in slow cooker. Stir. I thought I had split green peas but when I put it together I realized I only had whole yellow peas. They still worked just fine.
3. Cover and cook on low for 8-9 hours or high for 4-5 hours.
Makes 5-6 servings.

Oh yum! I did my first soup of the season this weekend too. I love this time of year, and definitely want to try this recipe!
