Pesto Alfredo Pasta

Pesto Alfredo Pasta
1 1/2 cups rotini
1 1/2 cups cooked, chopped turkey (or chicken)
8 oz sliced mushrooms
1 medium onion, chopped
2 cups steamed spinach
1 cup alfredo sauce
3 heaping tbsp prepared pesto (I haven't tried making this myself yet)

1. Steam spinach. (This probably isn't necessary, you could sautee it with the rest). Cook pasta according to package instructions.

2. Sautee onion and mushrooms with a bit of EVOO. Stir in spinach and turkey.

3. In a bowl, mix together Alfredo sauce and pesto. This was a lot of sauce -- it would have easily covered more pasta. We just ended up with really creamy pasta.

4. Combine sauce, cooked pasta and filling. For some reason, I wasn't thinking and added half the sauce to the pasta, half the sauce to the meat mixture and then put it together. Hmm, interesting.

Serve with Ciabatta and enjoy!
