Rice and Beans


Rice and Beans
1 cup chopped peppers (I used a combo of bell peppers and hot peppers)
1 small onion, chopped
2 garlic cloves, minced
2 cups cooked black beans (or one large can)
3-4 tomatoes, diced (or one large can)
1 cup of salsa (or more)
1 tsp chili powder
1 tsp cumin
1 cup rice, cooked

1. Sautee peppers, onion and garlic in a little bit of olive oil and salt and pepper until tender.

2. Add beans, tomatoes, salsa and spices. Stir to combine. Cover and let simmer for 5-10 minutes until heated through.

3. Add rice. Add more salsa, if necessary, until desired sauciness is achieved.

4. Serve on tortillas topped with shredded cheddar cheese as a main dish or serve on its own as a side dish.

This makes... a lot. The last picture shows the dish AFTER we had eaten supper.
